 Curried Chicken Salad

This curried rooster salad is an ideal make-ahead dish for lunches or a fast dinner. Prime over a mattress of lettuce, unfold on a bit of complete wheat toast, or eat alone for a candy and crunchy meal certain to make your style buds sing!

 

This recipe makes 4 cups.

 

INGREDIENTS

1 pound boneless skinless rooster breasts

1/2 cup Greek yogurt 0% fats

1 tablespoon mayonnaise

2 teaspoons lemon juice
1 tablespoon curry

1 teaspoon turmeric
1 cup crimson grapes, halved
1/2 cup chopped celery

1/3 cup golden raisins
1/3 cup cashews

 

INSTRUCTIONS

  1. Carry a big pot of water to a rolling boil.
  2. Add the rooster breasts and cut back warmth to medium-high.
